Each of the four slopes of Mount Etna has its own history and presents a variety of different soil types and climactic characteristics. At the Benanti Vineyards, the indigenous white grape Carricante is grown at 3000 feet elevation on the southern slope and the indigenous yeasts are selected from other Benanti vineyards aged 20-60 years.
The juice goes through a 12 day cold fermentation in stainless steel tanks to preserve freshness. The wine is bone dry and minerally, with upfront aromas of apple and orange blossoms. There’s pleasant acidity and saline notes with a long persistent finish marked by notes of anise, citrus, and almond!
