Domaine Gavoty was founded in 1806 by Philemon Gavoty. 8 generations later, Roselyn Gavoty presides over the 50 hectare estate dating back to the Roman era.

Roselyn applies her consummate blending skills using 66% Cinsault, 34% Grenache, and a touch of Carignan. She allows the grapes to macerate for several hours before pressing and applying the saignee method (bleeding off juice) and first press juice and vinifying the juice separately.

Coming from the Cabasse region in the cooler northwestern regions of Provence, the wine has more backbone and lift and a racy acidity to accentuate its food friendly versatility!
