From the producer: "From Dolcetto grapes, harvested by hand in small red baskets. We reproduce the old system of foot pressing, only half of the grapes are pressed, the other part is shelled only, leaving the grapes intact. This allows us to rediscover the fragrance of ancient flavours, with a less aggressive tannin."
