A Qvevri-aged co-ferment of 50% Muscat Valvin macerated with 50% farmstead apples. 

While the biblical story of Eve and the apple and her decision is now realized as a step toward empowerment in our contemporary world, it is fitting to name this wine after the mythic first woman that brought us out of the garden and gave us the world!

This is a wine with so many dimensions. Made at Chertok Wines in Shoreham, Vermont, the wine is a cutting edge blend of 50% Empire and Maccoun apples from their apple orchards and 50% Muscat Valvin from Folts Family Vineyards in the Finger Lakes region of New York. The grapes are foot crushed in whole clusters and after 3-4 weeks of maceration, lots were split in two and filled back up with apple milling and macerated for another 1-2 weeks before being pressed and the juice placed in a Qvevri, an ancient wine vessel going back over 8000 years in the Eastern European country of Georgia.

This is the first Qvevri-aged hybrid wine of apples and grapes produced in New England! The juice is racked without fining or filtration  producing a totally unique and compelling story and partnership with these two iconic fruits! If there was ever a stand alone wine hybrid this it!
