The pet nat is the oldest system of making a sparkling wine in a natural bottle, there is a bottling of the wine on the crescent moon, with the addition of dried grape juice or natural residual sugar from the first fermentation which gives the refermentation in the bottle. the result is a more persistent and long-lasting natural fizz, as it is not filtered it keeps the bubbles longer.
