From the producer: "100% Frontenac Noir, as with all the wines this was hand-harvested, foot-trodden and fermented with native yeast. We left this wine on the skins for 7 days and then pressed off into Flextank for 18 months! Starting with intense black and blue fruit and a wild intensity, over time the acidity remains present (it IS Frontenac Noir, after all!), but the fruit has settled down a little to allow some beautiful pepper and spice to come through.
We still recommend serving this wine with a little chill on it to accentuate the floral character and bring out the bright fruit
