"Life Cycle; balsam fir and mixed culture beer. 5.2% abv, brewed Dec. 2021/bottled July 2022. Yes, this beer started as a Christmas tree. Cut from our property, conditioned a couple weeks in our living room, then chopped into branches and chilled with a wheat based wort in the coolship. After six months in puncheon, I combined it with fresh fir tips that spring, and bottled it a month later. My goal was to sell it that December, but it was too incandescent! Almost like chewing on a lightbulb and inhaling the phosphorus. It needed time to harmonize and mellow out. A year later, this beer has reached a nice balance. The fir character is really intense still, but is much more integrated and at peace."
