A blend of shiraz, pinot gris, and sauvignon blanc from Western Victoria, made by the second-generation Joy family, who have tended to their organically-farmed plot in the Victorian Pyrenees since 1999. The Pétillant #1 is made sparkling through the ancestral method, whereby a single fermentation is bottled half-way through (rather than a full secondary fermentation in bottle, like with Champagne). The result? An undisgorged (cloudy), fragrant, dry, textural wine that is delicious, vibrant, and just a little bit wild.
