"This month I have a new sumac; a counter to Perfect Red King released earlier this year. PRK was a more austere and lemony expression of sumac, brought into focus in the barrel, with brighter and sharper angles. This edition, Maps, is a much rounder, pillowy wheat beer with fruity and herbal sumac expressions. I’m always experimenting with where, how and when I use these complex foraged ingredients."
