The crisp brightness of wild-fermented yeast is balanced with the gentle mouthfeel of honey to produce a harmonious and extremely drinkable dry mead as suited to summer sunsets as long winter nights.
Nought is fermented for over a year in oak barrels previously used to age red wine. Bottled without filtration, Nought is both eminently traditional and refreshingly singular, standing alone as North America’s most traditional mead.
