"Queue de Loup, the tail of the wolf, is our newest wine, a rosé made from 95% Brianna blended with 5% La Crescent and steeped with Marquette skins and La Crescent skins, all from our Vergennes vineyard. Handpicked from early September to late October, after a very dry growing season and warm and rainy autumn. This block in the vineyard is divided into unpruned and pruned sections that get alternerated. All the fruit was fermented whole cluster for 2 days, then destemmed, light to no foot crush, and pressed directly. Spontaneous yeast fermentation and elévage in fiber egg on fine lees. In January, skins from pressed Marquette and La Crescent from the same vineyard were added for 3 months."
