Lemon-green in the glass with a very elegant bouquet filled with hot volcanic stones, honeysuckle, dried apricot and green apples. On the palate, the wine is very complex with high acidity, grapefruit flesh, honeydew and zingy minerality. The wine pairs wonderfully with oysters, salt-crusted whole fish, grilled fowl and an assortment of fresh summer fruits.
Assyrtiko, one of the renowned varieties in Greece, finds its supreme expression in Santorini, the most historic vineyard of Greece and one of the most ancient in the world which extends across 1.200 hectares. Due to its volcanic soil, Santorini has never been affected by phylloxera, thus preserving its vineyards. Along with its particular microclimate, and the island's viticultural and oenological tradition, this unique terroir is responsible for some of the highest quality wines produced from this country.
