Made in a semi-carbonic fashion, this one is very lively, fruity, and ready for consumption now. Made with 100% Marquette, we foot trod down the grapes a bit to start a gentle fermentation, with lots of whole clusters remaining to go through a carbonic (intercellular…or as I like to say, inter-grape-ular) fermentation.
We let that continue for a week with gentle punch downs, then destemmed everything and pressed into flex tank to finish fermentation, no yeast or anything added.
