From a cooperative comprising 200 family vineyards in the Valpolicella Classico area in Veneto, Italy since 1936, the Valpolicella Ripasso (meaning "re-passed") is when the fermented juice of Valpolicella is re-passed with the unpressed skins and partially dried grapes from Amarone (Appassimento Method). This refermentation adds tannins, jammy texture, and complexity and creates a smooth and elegant wine with dark red fruits along with some tasty cinnamon! The grapes used are 70% Corvina, 15% Rondinella, and 15% Corvinone.
