From the winemaker: "Cantata di montagna is a wine associated with mountain. Itʼs made with grapes from contract growers in the mountainous region and fermented at Ashikaga's mountain winery. Petit Manseng, which was first planted in 2006 in Kokoromi Gakuen's vineyards from the foothills of the Pyrenees Mountains in southwestern France, is well adapted to Ashikaga's climate and shows its character as the saying "the right variety for the right region" goes. And in 2008 Petit Manseng was first planted in Kaminoyama City, Yamagata Prefecture. Since then, Petit Manseng has been carefully taken care by the frontier spirits of contract farmers in each region, and has come to take root in each climate and region. The "Cantata di montagna" is made from fully ripe grapes fermented naturally with wild yeast. It is a white wine with rich acidity and a long, lingering finish that echoes with a pleasant chorus.
